What’s for Dinner? 5 Recipes the Whole Family Will Love

Dinner this week has something for everyone – chili, easy enchiladas, and ramen stir fry for the causal diners and Chicken Cordon Bleu or seared tuna for those looking to serve something extra special.

Valentine’s Day is one of my absolute favorite holidays. It’s hard not to get carried away. Make cookies! Handmade Valentines! Plan a special date! This year with busy schedules all around I decided to keep it simple. Instead of doing more, I’m going to be extra intentional with the tasks I already do. The recipes I picked this week help me express the love I feel for my family.

Slow Cooker Shredded Chicken Chili is my perfect dinner. Having a steaming bowl of chili waiting for me when I get home is totally my love language. I’ll make Beef and Broccoli Ramen Stir Fry for my oldest. He adores stir fry and beef.

Our whole family likes Chicken Cordon Bleu. The combination of boneless chicken, cheese and prosciutto is a classic that deserves a seat at the table. The best part is, I can prep it over the weekend, freeze it, and have ready when I am.

Easy Enchiladas are for my sweet husband. We spent many date nights talking over cheese enchiladas. Finally, Friday brings about Seared Tuna with Avocado for my youngest. He shares my love of sushi and is always excited when seafood is on the menu.

    A classically decadent meal for the loves in your life. Chicken breast is flattened and wrapped around prosciutto and stuffed with gruyere (or swiss) cheese then topped with crunchy breadcrumbs. Not only will everyone love this dish, but it can be prepped and frozen beforehand.

    I have a soft spot for cheesy red enchiladas and this easy vegetarian dish is just what I need when the craving strikes. Lightly fried yellow corn tortillas filled with shredded cheese and topped with a quick red enchilada sauce. The casserole bakes in the oven for a mere 15 (!!!) minutes. Serve with Instant Pot Refried Beans.
