With dishes from Korea to Mexico and a few stops in between, this meal plan will provide you with flavorful recipes that excite your tastebuds like the warm heat of gochujang, a fermented chili sauce or bright, refreshing ceviche. I’m always a fan of deviating from our family cuisines to the foods of the world, it gives us to opportunity to eat diversely all week long.

Think of ways to save time in the kitchen. To help inspire you, most of these dinners pair up nicely with steamed rice, so make a big batch on Sunday night and store it in the fridge for meals like the Bulgogi Bowls or the Carnitas. Tortillas will go well with two of our meals this week, too, you can make them from scratch or grab a package or two from the market. Tortillas freeze nicely, just sayin'.

    Kick off our week of stay-at-home travel with a trip to Korea. Start marinating the beef for this recipe on Sunday evening to make Monday night less labor-intensive. Don't stress if you don't have a sous vide. You can also cook this bulgogi on the stovetop.

    The vegetarian noodle salad is so simple to make that I decided to double down on tonight's meal and add a side of scallion pancakes (also vegetarian). Get the crew in the kitchen with you to cook the scallion pancakes on the griddle. The noodle salad is really easy to assemble on your own.

    Look at me being all generous this week! Another two-fer meal tonight. You'd think with as much flavor as this jerk chicken has, it would be impractical to make as a midweek meal. Nope! Just start marinating it the evening before, and while it's grilling, you can whip up the Coconut Rice and Beans.

    This Jamaican-inspired mash-up is the best way to lay a foundation for a banana bread sundae. Yes! I said a banana bread sundae. Drop a scoop of your favorite ice cream flavor (mine is coffee) on top of a warm slice of this bread and top with a drizzle of caramel and whipped cream. Bonus: leftovers go great with coffee for breakfast the next morning.
